Garlic Scape Pesto

<p>Garlic scapes are the seed stem that garlic produces as it grows. These scapes must be removed in order for the plant to expend its energy producing garlic instead of seeds. Farmer Helen does not discard them. She uses them just as she uses garlic.<br /> She developed this recipe for pesto using the scapes. Its flavor, while garlicky, is a bit more subtle than garlic. Farmer Ben said,&quot; I bet that would make delicious garlic bread. It does!&quot;</p>

Serves: About 1 cup of pesto


Ingredients
10 stems garlic scapes
1/3 cup grated Parmesan cheese
1/3 cup slivered almonds or raw cashews
1/2 cup olive oil
pinch sea salt

Step by Step Instructions
  1. Put garlic scapes, cheese, and nuts in food processor
  2. Whir to chop and blend
  3. Add oil and mix
  4. Add salt to taste
  5. Use immediately or cover tightly and refrigerate
