Tortilla Soup

<p>This soup is a perfect cooking option to clean out the freezer and the root cellar.</p>

Serves: 4-6
Vegan!

Ingredients
3 onions, 1/4'd and sliced
6-8 cloves garlic, minced
1/2 tsp salt
1/4 tsp ground black pepper
6 cups tomatoes, diced (or cherry toms)
3-5 carrots, diced
4 cups vegetable broth
1 tsp cumin
t tsp paprika, ground
1 cup green/red/paprika pepper, diced
1/2 cup green olives, diced
1 pkg Seitan (WheatMeat, White Wave brand)
1 cup cilantro, rough chop
3-4 leaves kale, chopped
1-2 jalapeno, diced (optional)
1 1/2 cup corn kernals

Step by Step Instructions
  1. Add all ingredients in order to large cooking pot; simmer 45min. Serve with crushed tortilla and/or Tofutti brand Sour Supreme.
  2. Many ingredients can be put-up the season before.
  3. tomatoes (core, dice, freezer bag, freeze)
  4. cherry tomatoes (just pop in a freezer bag, freeze)
  5. ground paprika pepper (slice, dry, grind)
  6. green/red/paprika peppers(slice, freezer bag, freeze)
  7. cilantro (loose chop, plastic tub, cover w/ water, freeze, pop out and freezer bag)
  8. kale (wash, pat dry, freezer bag, freeze)
  9. jalapenos (freezer bag whole, freeze)
  10. corn (blanch 2min, ice water cool, slice from cob, freezer bag, freeze)
