Ginger Carrots

Serves: 1 quart


Ingredients
3 c grated carrots tightly packed
1 TBS Freshly grated ginger
1 TBS sea salt
4 TBS Whey (or 1 extra T of Sea Salt)

Step by Step Instructions
  1. Mix all ingredients in a bowl and pound with wooden spoon or a meat hammer to release juices. Place in Quart size mason jar and press down firmly. The top of the carrots should be at least 1 inch from the top of the jar. Cover tightly and leave at room temp for 3 days before transferring to cold storage.
