Fresh Tomatillo Salsa

Serves: makes ~3 cups


Ingredients
2 Anaheim chile peppers, roasted ,peeled and chopped
1 # fresh tomatillos ,peeled and stems removed
2 fresh serrano chilles cut in half
1/2 cup onion ,chopped
1 med clove garlic, minced
1/4 Tbsp chopped fresh cilantro
1 tsp Olive Oil
1 tsp lime juice
1/4 tsp salt

Step by Step Instructions
  1. Pulse tomatillos in food processor until coursely chopped.
  2. Add peppers and next three ingredients; pulse until small dice, but do not over process.
  3. pour into serving bowl. Stir in the olive oil,lime juice and salt until well blended.
  4. Cover and chill
