Sesame & Soy Glazed Roasted Japanese Sweet Potatoes

Vegan!

Ingredients
1 1/2 pounds Japanese sweet potatoes
2 tablespoons Soy sauce
1 1/2 tablespoons Sesame oil
1 tablespoon Maple syrup (optional)
1/2 teaspoon Garlic powder
1/4 teaspoon Red chili pepper flakes
1 tablespoon Sesame seeds (for topping)
2 tablespoons Chopped fresh chives (for topping)
OR green onions (for topping)

Step by Step Instructions
  1. Preheat oven to 375 degrees. Wash & peel the sweet potatoes and cut them into wedges. Arrange the wedges in a 9 x 13 baking dish.
  2. Mix the soy sauce, sesame oil, maple syrup (if using), the garlic powder, and red chili flakes together in a bowl. Drizzle the mixture over the sweet potato wedges and gently toss them to ensure they are well coated.
  3. Sprinkle the sesame seeds over the sweet potato wedges, put the baking dish into the oven, and bake for 35 to 40 minutes.
  4. Remove the baking dish from the oven. Top the wedges with chives or green onions, then serve.
