Salad with Muscadine Vinaigrette

Ingredients
FOR THE VINAIGRETTE:
20 Grapes
1 teaspoon Honey
1/4 teaspoon Sea salt
1 tablespoon White wine vinegar
1/2 cup Canola oil
FOR THE SALAD:
3 small Peppers (thinly sliced)
5 Okra (thinly sliced)
1 Squash (thinly sliced)
10 Cherry tomatoes (cut in half)
1 or 2 larger Tomatoes (cut into wedges)
Lettuce
Goat cheese

Step by Step Instructions
  1. Cut the grapes in half, remove the seeds, and squeeze out the grape innards. Put the grape skins and half of the grape innards into a food processor. Set the other half aside.
  2. Add the honey, salt, and vinegar to the food processor and puree until smooth. Slowly add the canola oil while the machine is running to let it emulsify.
  3. Pour the vinaigrette over the remaining grapes and mix to combine.
  4. Combine and toss the lettuce, peppers, okra, squash, and tomatoes with the vinaigrette, season them with salt & pepper, and top the salad with cheese
