Grilled Sweet Potatoes in Foil

Vegan!

Ingredients
1 medium sized Sweet potato
1/4 teaspoon Olive oil
1 pinch Sea salt
Fresh herbs (optional)

Step by Step Instructions
  1. Set the grill to 350 degrees (cook the sweet potatoes using indirect heat. For gas grills, turn off the burners immediately under the sweet potato.)
  2. Cut a piece of aluminum foil large enough to wrap around a sweet potato.
  3. Spray or rub the olive oil onto the sweet potato and sprinkle the salt over it (and fresh herbs if desired). Using a fork, poke holes in the potato, then wrap it in the foil.
  4. Place the wrapped potato onto the grill, then cook with indirect heat for 40 minutes (longer if the potato is very large).
