Serves: 12

Ingredients
6 pounds Pork ribs
3 cups Ketchup
2 bottles Guinness beer
2 cups Barbecue sauce
2/3 cup Honey
1 small Onion (chopped)
1/4 cup Worcestershire sauce
2 tablespoons Dijon mustard
2 tablespoons Chopped chipotle peppers in adobo sauce
4 teaspoons Ground chipotle pepper
1 teaspoon Salt
1 teaspoon Garlic powder
1/2 teaspoon Pepper

Step by Step Instructions
  1. Wrap the ribs in heavy-duty foil and grill them covered for 1 to 1 1/2 hours.
  2. Combine the ketchup, beer, barbecue sauce, honey, onion, Worcestershire sauce, honey, mustard, peppers in sauce, ground chipotle pepper, salt, pepper, and garlic powder in a saucepan and bring the mixture to a boil, then reduce to a simmer and let cook uncovered for 45 minutes (stir occasionally)
  3. REmove the ribs from the foil and pace them over direct heat. Baste them with the sauce and grill them (covered) for 30 minutes (turn them once and baste them periodically throughout the cooking process). Serve the ribs with the remaining sauce.
