Fried Green Tomatoes (Southern Style)

<p>Great use of tart, firm green tomatoes that are available at the end of growing season.</p>

Serves: 4 to 6


Ingredients
6 medium green tomatoes
2 large eggs (lots of beautiful fresh eggs on the Market)
1/2 cup goat milk (or any milk)
1 cup flour
1 1/2 cup plain bread crumbs
1/2 cup cornmeal (or cornmeal mix)
Salt and pepper to taste
Oil for frying (I use canola but any will do)

Step by Step Instructions
  1. Wash and slice tomatoes crosswise into equal 1/4 inch slices. Place flour on dinner plate. Mix egg and milk and place in medium bowl. Combine bread crumbs, cornmeal, salt and pepper in large bowl.
  2. Heat oil in large cast iron skillet until sizzling but not smoking.
  3. Coat slices in flour, dip in egg-milk mixture, then coat in crumbs mixture. Place carefully in hot oil and fry until browned, turn and brown other side. Remove to paper towels to drain. Continue until all slices are done. Serve hot with Ranch dressing or just with added sprinkling of salt.
