Buffalo Con Queso Dip

<p>My mother-in-law, Gail Carrell, used to make this delicious dip for her bridge club meetings. We replaced the beef with buffalo and gave it a new name. It is popular at our farm events. Kids love it!</p>

Serves: 4-6


Ingredients
1 lb water buffalo premium ground
1/2 cup onion, chopped
1 clove garlic, minced
8 oz tomato sauce
8 oz cream cheese, softened
1/3 cup parmesan cheese
1/4 cup ketchup
3/4 tsp oregano, dried or fresh
4 T fat for cooking (butter, olive, coconut, etc.)
1 bag tortilla chips

Step by Step Instructions
  1. Heat the cooking fat over medium heat. Saute the onion and garlic until just soft.
  2. Add the water buffalo premium ground. Cook until browned, using a wooden spatula to break apart. No need to drain (any fat in the pan is good fat.)
  3. Add remaining ingredients. Stir until smooth and warmed through. Keep warm in a crock pot if desired. Serve with tortilla chips.
