Fresh Cabbage Salad

Serves: 8 to 10 as a side dish


Ingredients
1/4 head cabbage (any variety)
4 medium carrots
1/3 cup white wine vinegar
1/3 cup sugar OR honey
1 tsp dried dill weed
1 tsp mustard powder
1/4 tsp each salt & pepper
1/3 cup mildly flavoured oil
1/2 cup chopped pistachios
1/2 cup dried cranberries
1/2 cup crumbled goat cheese

Step by Step Instructions
  1. Using a knife or a food processor, shred ¼ of a cabbage into a large bowl. Shred about 3 or 4 carrots (or as many as you’d like) and toss in with the cabbage. Dressing: 1/3 cup of white wine vinegar, 1/3 cup of sugar or honey, 1 tsp dried dill, 1 tsp mustard powder, ¼ tsp salt and pepper, 1/3 cup mildly flavoured oil. Drizzle some of the dressing over cabbage and carrots and toss and drizzle till lightly coated. Top with chopped pistachios, crumbled goat cheese, and dried cranberries.
  2. Dressing: stir together vinegar, sugar or honey, dill weed, mustard powder, salt and pepper. Slowly whisk in oil until emulsified.
  3. Drizzle some of the dressing over the cabbage and carrots and toss and drizzle till lightly coated. Top with chopped pistachios, crumbled goat cheese, and dried cranberries.
