Sweet Chow Chow Pickles

<p>We used to eat this at home all the time as kids, and now that I am an adult I make this every season in my own home.</p>

Serves: approx. 7 1 litre jars
Vegan!

Ingredients
18 cups sliced pickling cucumbers -thinly
1/3 cup pickling salt
4 Medium sized onions
1 green pepper
1 sweet red pepper
3 cups vinegar
4.5 cups Sugar
1 TBSP Mustard Seed
1 tsp Celery Seed
1 tsp Turmeric

Step by Step Instructions
  1. Put all the sliced cucumbers in a large bowl, sprinkle with the pickling salt & let sit over night on the counter.
  2. The next day.... drain the water down the sink. Put all the above ingredients in a lrg pot, and add the cucumbers. Bring to a boil, then simmer for approx. 1.5 hrs. and put into hot sterilized canning jars.
