Arugula Cabbage Salad

Serves: 4


Ingredients
2 cups shredded green cabbage
6 cups arugula
1 organic apple, small dice
small handful sliced almonds
3 green onions, minced
3 Tbsp dried rosemary
4.5` oz sun dried tomatoes in olive oil, julienned
1/2 lemon, juiced
3 Tbsp olive oil
sea salt and black pepper

Step by Step Instructions
  1. In a large mixing bowl toss the arugula, cabbage, apple, and almonds.
  2. Whisk together onions, sun dried tomatoes, lemon juice, rosemary, and olive oil and black pepper to taste.
  3. Toss the dressing with salad ingredients
  4. For make-ahead, make the dressing and toss half of it with the pre-cut cabbage to marinated for a few hours.
